This past weekend, I traveled home to Colorado to spend time with Allen. It was such a fun trip–full of hiking, shopping, and as always, lots of good eating! Friday we spent exploring the hidden gems of Golden, CO. My favorite find was trying papusas for the first time at a little hole in the wall place we stumbled upon while walking downtown. On Saturday we met up with Colleen to explore the Boulder Farmers Market for the first time. I was blown away by just how fresh and plentiful the produce were! I already can’t wait to go back. We picked up colorful carrots and beets, as well as heirloom tomatoes, fresh rosemary pasta, and basil pesto. On Sunday we spent the entire day exploring the newly opened routes in Rocky Mountain National Park. While there were lots of people roaming about in the park this weekend, we stuck to the trails less traveled and found happiness in the solitude of a hidden lake and the fields of wildflowers that led us there. Below are a few of my favorite moments from my time in Colorado this past weekend.
This upcoming weekend, I’m so excited to have Allen join me in Texas for a food tour through Austin over the long 4th of July weekend! Believe it or not, I’ve only been to Austin one other time (I know…right?!). So I’m excited to do lots of exploring outdoors (kayaking on Lady Bird Lake looks like a dream), as well as plenty of eating too (Austin’s food truck game is strong).
