Good morning, friends! Today I’m sharing a recipe for scrumptious oatmeal double chocolate chip cookies. You may not believe it, but yesterday we had a snow day here in Boulder, CO! For someone who used to live in South Texas and have school canceled for any mention of snow fall, I truly wasn’t expecting Colorado of all places to cancel school, ever. But I’m not complaining! It was a happy, happy surprise. I spent the whole day indoors, snuggled up under a blanket , enjoying the snow fall from my living room window. And you know what they say…”When life gives you a snow day, you stay inside by the fire and bake oatmeal double chocolate chip cookies.” You haven’t heard that one? Well I guess it’s still making its way around! 😉
At any rate, these oatmeal double chocolate chip cookies are sure to become a favorite of yours, as they are both quick to make and delicious to eat! I love how the brown sugar adds the sweetest molasses flavor to the cookie, while the oats add a hearty texture that warms you from the inside out. And oatmeal cookies are a little healthier for you too, right? Justification by any means, ladies. The original recipe calls for 1 cup of chocolate chips and one cup of nuts…but by now, you know that I made the substitution for 2 cups of chocolate chips without hesitation. Because #chocoholic. But adding nuts would bring a delightful crunch to the warm gooey centers of the cookies if you are interested in adding them!
Overall, I was extremely pleased with how these oatmeal double chocolate chip cookies turned out–they were the perfect sweet treat on our snow day spent at home. And I just know they can bring a little sweetness to your day as well! Enjoy!
Recipe
Cookie Ingredients:
- 1 1/2 cups brown sugar
- 1 cup butter, softened
- 1 tsp vanilla
- 1 egg
- 2 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups chocolate chips (or sub 1 cup nuts)
Directions:
- Heat oven to 350 degrees.
- In a large bowl, stir brown sugar and butter together until blended.
- Stir in oats, flour, baking soda, and salt.
- Mix in chocolate chips (and/or nuts).
- Onto ungreased cookie sheet, place rounded teaspoons of the dough roughly 2 inches apart.
- Bake 10 to 12 minutes, or until lightly golden on the top.
- Allow to cool for a few minutes before moving to a cookie sheet and enjoying!
