Good morning, friends! Today I’d like to share with you a little recap of our weekend, full of great hiking and a fun little date night in Louisville. So without further ado, here we go!

As I may have mentioned over the past couple weeks, school has been pretty demanding of my time recently. So Friday, I took the day off (I use this term loosely) to work in a little coffee shop in Boulder. I loved the change in scenery and was surprisingly productive. If you missed my post on Wonder Press, it’s quickly become my go-to spot in Boulder for studying.
After working most of the day, I had Allen pick me up whereupon we both discussed how starving we were. It’s a common occurrence with us. So common in fact that sometimes it seems like our whole lives revolve around food. Haha đ But I digress… Being as famished as we were, we decided on the fly to drive to one of our favorite little places in Louisville for an impromptu date night.
I love taking little road trips on the weekend, even if it’s only for 15-20 minutes, which is the distance to Louisville from Boulder. The Colorado sky and the wide open road is unbeatable.
If you haven’t been, Louisville is the cutest little town. And while we’ve only been to The Huckleberry so far (THE best home-cooked meal), they’ve also got a little BBQ joint we are dying to try as well.
The Huckleberry has the sweetest selection of cupcakes and cakes, but their pie is what we love the most.
Inside, The Huckleberry has the coziest decor–it feels like they are serving you right out of their own home. I particularly love the daisy-chain benches they have in the hallway to the restrooms. So cute, no?
For dinner, we split a heaping portion of fried chicken, doused in homemade spicy gravy with mashed potatoes and creamy corn. It’s the best around, no exaggeration necessary. It simply is the best.
And as you can see, I was pretty stoked about it.
For dessert, we each got our own pie. We split the dinner so we could each get our own piece. #priorities đ I went for the blackberry pie, while Allen got the huckleberry and peach pie. We love how their crust is covered in coarse grain sugar to give it a rich, hearty texture. Pair it with a buttery dollop of ice cream and you’ve got the perfect combination. Warm and cold. Crunchy and smooth. Mmmm…
After dinner, we walked around town a bit (a little too full for comfort) before heading home for a movie snuggled up on the couch. The perfect end to a perfect day.

Later that weekend, we decided to go on a hike in the Flatirons. When I first moved to Boulder, a few friends and I hiked along the Royal Arch trail. And since I had’t been on that particular trail since last fall, I thought it would be the perfect medium-length hike for a fun Saturday spent outdoors.
Many of the Faltiron trails start at the Chautauqua Trailhead, and the Royal Arch trail is no different. I love this view of the mountains. The Flatirons are so unique and having the opportunity to hike them whenever we want is a true blessing.
When we passed by the Second Flatiron along the trail, Allen couldn’t resist climbing up it a ways. He’s done the whole face a few times with one of the guys in my research lab, but it’s way too scary for me to climb.
I love all the unique and interesting branches along the trail. Allen and I thought this one in particular resembled a dragon. Naturally, Allen had to growl a little at it.
Our hike started off a little cloudy and overcast, but by the middle of our trek it was bright and sunny outside. Quite the perfect day for a springtime hike.

Looking at these photos now, and knowing that the ground in Boulder is now covered in snow, it’s incredible to see myself in shorts this past weekend. How quickly the weather can change around here!
As a side note, if you’re looking for a great trail shoe, I love these Merrell trail shoes. I first got them for walking around Europe last summer, but have used them exclusively on all the trails around Boulder. I’d highly recommend them as a great overall trail-hiking shoe if you’re in the market for one.

After our hike, we went home to relax and spent the rest of the weekend taking it easy and enjoying our time off. It was quite the perfect weekend spent relaxing but also enjoying the fantastic spring weather we’ve been having around Boulder.
