Happy Monday, friends! A lot has happened over the past few months and we haven’t tagged up about progress on my 101 Things in 1001 Days list recently. So today, I’m updating you on some of the items I’ve completed, as well as those goals I’ll be focusing on in the new year! P.S. – I’m already over half way through my 1001 days…how did that happen?! Gotta get cookin’ on some of my goals in the coming months. Let’s do this!

Recently completed goals and/or recent progress:
7. Connect with 10 blogging friends in person. (6/10) I met with another Boulder-based blogger, Lexie, back in the fall and had such a great time discussing life, friendship, and travel with her! I also met with the newly transplanted Denver blogger, Jess, who’s a middle school science teacher. We bonded over our shared love of all things science-y. #insertnerdemojihere
18. Find a practical daily routine. I’ve made great leaps and strides on this one last semester and found that the following routine works best for me. Blogging early (really early) in the morning, followed by a full day of work and exercise in the evening. Following this loose schedule seems to help me be my most productive day-to-day.
31. Make an informed vote. I voted in the 2016 Presidential election! And while I should be making informed votes more often than every four years, I was very proud of myself for putting in the time to do all my research on the candidates and even challenging myself on my own beliefs and stances in the process. It’s crazy how much you can learn about yourself when you don’t take your beliefs and opinions for granted.
44. Grow my hair out. I think it’s safe to say that I’ve let my hair grow long and strong! Don’t worry, I won’t be cutting it any time soon. I love having the extra length!
46. Organize my jewelry and other accessories. I finally put in the time to clean out and organize all my jewelry so that it is easily accessible on a day-to-day basis. Now the trick will be to keep it that way. 😉
52. Have fresh flowers in the house for two weeks. I really loved having fresh flowers in the house to brighten up the space (and my mood!). It’s definitely something I would do every week if it weren’t so expensive.
57. Try five new foods. (17/5) And the list continues! (Still crazy surprised that I was so adventurous this past year.) Currently obsessed with pho.
58. Cook at home more often (one meal out per week for one month). Allen and I have been trying really, really hard to stick to a budget this past month. And I’m happy to say we are well on our way to saving so much more money now. I was exceptionally proud of all the cooking we did this month (considering final exams and projects). And we even tried a few new recipes, like this Mozzarella Pasta with Sun-Dried Tomatoes and this Slow-Cooker Beef Stew.
71. Take one weekend trip per month. Allen and I have had no trouble finding new places to explore each month. Check out our most recent trips to Aspen, the Great Sand Dunes, and Telluride.
76. Visit five National Parks. (9/5) Loved adding Great Sand Dunes and Black Canyon of the Gunnison National Parks to my growing list!
95. Discover fifteen new favorite restaurants. (16/15) Recently discovered Yellow Deli as a favorite fresh sandwich spot with the best hobbit-themed decor. Try the Spring Chicken or the Deli Rose if you are ever in Boulder!
Upcoming goals:
13. Take REC classes three times per week for three weeks. I’m really excited to start the year off right by taking a few exercise classes at the Rec. I want to get back into running as well, but think having an outlet for indoor exercise will be of great benefit with the anticipated snow fall.
23. Run one 5k per month for one year. I’m making this the #yearofthe5k, friends. My good friend Susan made it her goal last year and had so much fun completing it! She’s inspired me to tackle this goal for myself in 2017.
27. Start homework the day it is assigned for one month. I tend to be a bit of a procrastinator when it comes to homework. Not necessarily that I just don’t want to do it, but usually that I have 10 other things I prioritize over it. So next semester I’d like to commit to starting each homework set the first day it’s assigned, no matter how far I get on it…just starting it! I think this will go a long way in reducing my overall stress levels and lead to a much happier life.
32. Learn the major constellations. I got a start on learning the major constellations this past semester, but I’m no expert yet. I’d love to be able to identify the top ten constellations each season and to share my tips/tricks with you along the way.
53. Unplug one day per week for one month. Learning to unplug (and de-stress) will be a huge goal of mine in 2017. I had a lot of issues with stress (and dealing with stress) this past year, so I’d like to make my mental health a priority in the year ahead.
63. Send fifty handwritten notes. Alongside unplugging for one day each week, I’d like to make that time constructive and intentional. My ultimate goal is to use this extra time to write sweet notes to friends and family, letting them know I’m thinking about them. With my busy schedule, I’m not the best at keeping in touch with people, so I’m hoping this will help with that!
66. Host a dinner party/game night. I’d love to host a dinner party where we get together with some of our closest friends to each chili and play board games all night. Allen just got Galaxy Truckers for Christmas, so that is definitely on our list of games to play.
74. Go snowshoeing. I really, really, really want to try out snowshoeing this season! Do you have any good recommendations for Colorado locations?
85. Go ice skating. Along with snowshoeing, I’d love to try ice skating this winter as well. (It’s already on my Winter Bucket List, so I’ve got to make it happen, right?!)
