The weather can be so unpredictable in Boulder come springtime. But this unpredictability has surprisingly become something I look forward to. While most days are sunny with a chilly nip in the air (somewhere in the 50’s), it’s not totally unheard of for the next day to bring snow storms or summer heat waves. You just never know! And I love that I get to experience a little of every season this time of year.
When the weather heats up outside, especially on the weekends, you can be sure to find me and Allen strolling along Pearl Street and stopping in at one of our favorite places for lunch–Organic Sandwich Co.
I first discovered Organic Sandwiches at the Boulder Farmers Market a couple years back and have enjoyed getting their tasty sandwiches every trip since! (See how I spend my weekends in Boulder here.) Little did I know at the time that they had a shop (open year-round!) that I could stop in whenever I wanted an amazing sandwich. It was a dangerous but delicious discovery for me!
I am a creature of habit and always get the Turkey + Brie Sandwich (made with cheddar instead) that comes on the most fantastic artisanal bread. Along with the turkey and cheese, the sandwich comes layered with sweet grilled onions, crispy green apple slices, and spicy arugala leaves. Can you say Y-U-M!? Allen on the other hand loves trying something new every time. This particular trip he got a mushroom melt that had all different kinds of cheeses on the inside and looked absolutely incredible! One of these days, I will venture outside my comfort zone…but for now I’m sticking with what I love!
It’s the perfect little Boulder-local spot to grab a bite to eat on those wonderfully warm spring weekends!
