Autumn Monster Cookies (The Perfect Camping Cookie)

Hi, friends! Today I’m so excited to share with you a new favorite recipe to try this season–autumn monster cookies! It’s been a hot second since I last shared a recipe here on the blog, so I thought it was about time to try something new in the kitchen. Baking is one of those things I genuinely love to do and brings me so much joy. So coming back to it recently has been so nice for the soul.

I have been on quite the cookie kick recently. Don’t get me wrong, I still love baking cupcakes, but there’s something really nice about the simplicity of baking cookies and not having to worry about the icing or other decorations. Plus, they tend to save longer and make great spontaneous gifts for the neighbors when you can’t eat them all yourself.

This recipe is full of all the yummy fall flavors like cinnamon, vanilla, maple syrup, and brown sugar. Oh and oats, coconut, almond butter, and peanut butter. So yeah, they’re pretty much healthy for you, right? 😉 Read on to find out how to make them yourself!

I absolutely love the texture of the cookies–thick and clumpy and still super soft on the inside. Yum! Just look at all those hearty fillings in there.

Also, autumn monster cookies make the best camping cookies. Oats, chocolate, peanut butter, and brown sugar. What more could you want in a cookie while exploring the great outdoors?! We took a box full of them out camping with us near Steamboat with friends and loved having them for snacks throughout the day.

Alright, I’ve reproduced the recipe below for you to try at home! It’s an adaptation from a new favorite cookbook of mine, The Pretty Dish, which I would highly recommend! I hope you love these cookies as much as we do!

Autumn Monster Cookie Recipe

Cookie Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sweetened shredded coconut
  • 1 cup unsalted butter, at room temperature
  • 1/2 cup almond butter
  • 1 cup firmly packed light brown sugar
  • 1/4 cup pure maple syrup
  • 2 tbs molasses
  • 1 large egg
  • 2 tsp vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1/2 cup Reese’s pieces (or other peanut butter chip)
  • 1 cup dark chocolate chips
  • 1/2 cup walnuts (or other crunchy nut)

Directions:

  1. Preheat the oven to 325 degrees and line a baking sheet with parchment paper.
  2. In a bowl, stir together the flour, cinnamon, baking soda, and salt. Add the coconut and stir to combine.
  3. In the bowl of an electric stand mixer, beat the butter, almond butter, and sugar for 5 minutes, or until fluffy. Add the maple syrup and molasses and mix to combine.
  4. Add the egg and vanilla and beat until well combined, scraping down the sides of the bowl as needed. With the mixer on low speed, add the flour mixture in 2 batches; mix until just combined.
  5. Add the oats, Reese’s pieces, dark chocolate chips, and walnuts and mix on low speed until combined.
  6. Scoop approximately 3 tbs of dough to form each cookie and place 2 inches apart from the next on the baking sheet. Bake 15 to 17 minutes, or until the edges begin to turn golden brown.
  7. Let the cookies cool on the baking sheet 2 minutes before transferring to a wire rack for cooling. And enjoy!
